This is the kind of recipe that you can play around with. Add different kinds of nuts and dried fruits, leave out the nuts, add more of something or less of something. Whatever you do, it will turn out good!
Vegetable oil or non-stick cooking spray3 cups uncooked old-fashioned rolled oats1 1/2 cups chopped nuts (almonds, pecans, walnuts or a combination)1 1/2 cups dried fruit, chopped if large (raisins, apricots, dates, cherries, blueberries or a combination)1 tablespoon vanilla extract1/2 cup water1/2 teaspoon salt1/2 cup pure maple syrupGluten-free: Substitute gluten free oats for the rolled oats
Tree-nut free: Leave out the nuts. Use more dried fruit if desired, or add some sunflower or pumpkin seeds if tolerated
Soy-free: Use soy free vegetable oil or parchment paper to prepare the baking pan (many cooking sprays contain soy)
Preheat the oven to 300 degrees. Prepare a jelly roll pan (or other large baking pan with rimmed sides) so food won’t stick to it. You can put a small amount of vegetable oil in the pan and spread with a paper towel, spray the pan with the non-stick cooking spray or line the pan with parchment paper. Set the pan aside.
In a large bowl mix together the oats, nuts and dried fruit.
In a small bowl stir together the vanilla extract, water, salt and maple syrup.
Stir the liquid ingredients into the oat mixture. Mix well. Spread into the prepared pan.
Bake in the preheated oven for 30 minutes. Stir. Turn the oven off. Leave in the oven for 30 more minutes. Stir again. Leave in the oven for another 30 minutes. Remove from the oven. Let cool. Store in jars or other containers.
Makes 6 cups of granola.
